Description:

A mono variety, the Special Selection is made from a local olive variety called Changlot Real. It is a complex, harmonious and balanced extra virgin olive oil with a great personality and medium spicy bitterness.

In this intense and complex extra virgin olive oil, the founder of Masía el Altet, Jorge Petit, has used only the Changlot Real, a native Valencian olive which was discovered little more than a century ago in the Sierra de Enguera. The name is derived from the way in which it grows, similar to a bunch of grapes.

This multiple award-winning olive oil is produced on the Petit family estate situated in the heart of the Sierra de Mariola and Font Roja Nature Reserves in the Alcoy mountains of Alicante province. Located more than 800 metres above sea level, the farm creates a special microclimate giving this extra virgin olive oil some unique and unmistakable characteristics.

Jorge Petit is certain that it takes an excellent olive oil to satisfy discerning palates - from olives that have been treated with love and care and are picked at the perfect moment of ripening. For Petit Sr. a key ‘ingredient’ is the passion shown by the Petit family in nurturing each and every one of the 14,000 olive trees on the Masía el Altet estate.

Preparation and usage:

A more complex olive oil Special Selection pairs better with foods that have a strong taste like hearty stews and ripe cheeses. 

Red meat, oily fish, strong or ripe cheese, desserts.  

It is also ideal for seasoning dishes - salads, vegetables, soups and stews.

It will be appreciated by all those who wish to add a touch of distinction to the most creative dishes in haute cuisine. Or for those who simply wish to enjoy the simple pleasure of a piece of bread with olive oil.

Store in a cool place away from heat and light.

Smell: You will note from the very first moment a bouquet of fennel but also the smell of freshly-cut grass. Citrus fruits, such as orange, lemon and grapefruit, are also present. In this extra virgin olive oil, you will also find other aromas such as that of plantain, fig leaves, apple, peach and prune. 

All complemented with that of tender green almonds, both in the bark and the early fruit, and the tomato plant and green tomato. 

Taste: You will immediately notice density, sweetness and balanced spicy and bitterness. You will also notice the herbaceous notes described above and others such as citrus fruits, plantain and other overtones of spontaneous secondary perception.
